SOHC ZC no oil in oil filter

So I have been having a strange issue, I went to do an oil change and noticed the oil filter was bone dry. I replaced the filter and oil, turned on the car and checked and the filter after the car was on for a few moments and there was oil in it then. I then checked again the next day after driving it and it was totally empty again.
When I turn on the car from a cold start the oil light will stay on to up to 5 seconds, this is not normal I know this and its due to the oil filter being empty. This happens on any filter i put on, even OEM. I read a bad bypass valve in the filter but so far 3 brand new filters do the same thing. What else could cause this? If the filter if full of oil the oil light turns off instantly. The issue is the oil is draining out of the filter.

That light doesn't measure oil capacity in your filter. It measures oil pressure, or rather lets you know when your oil pressure is low enough to be a problem. That would indicate, at least to me, either low oil (shouldn't be the case since you just changed the oil) or a bad pump (or maybe one that is on it's way out). This makes sense since you say the oil filter is dry or has no oil AND you say the oil light stays on for a few seconds. Could also be the oil pickup is blocked/clogged and not allowing oil to be passed to the oil pump. I'd start there, drop the oil pan and clean it out real good and do the same with the pick up. If that doesn't change anything, then remove the pump and measure the clearances to see if it is still within spec per the FSM.

Well I did some more research and messing around
If i start the car up it will fill the filter up with oil, and if i turn it off and turn it back on even after 10 min the light will go right off. If i leave it for maybe 30+ min all of the oil will drain out of the filter, at that point when i start it up the filter must be filled again. The filter for some reason is not holding the oil, I have used 3 diff filters 2 OEM.
I dropped the oil pan and cleaned everything, it was all clean before i touched it, the motor has under 50k on it ( so it should). The pressure is fine as long as the filter is full like it should.
