Fluctuating temperature

As I was driving my car I noticed my temperature will fluctuate to half and back down to a quarter-ish once I start driving. The fans turn on and coolant levels seem normal. Anyone point me in the right direction. Thanks

Also, I can tell the fans turn on because I've had the car with the hood open and waited for them to turn on. Lol

Well Finally got a chance to look around and noticed that the radiator is slightly leaking from the top. Gonna replace and hope that's what it is thanks everyone for their help.

Leaky rads let air in to the coolant syatem and can cause all kinds of false electronic readings. I would also check the thermostat. Partially clogged thermostat may have overpressurized the radiator and caused the leak.
Update:
So radiator and thermostat has been change drove it from Los Angeles to Santa Barbara, about a 2 hour drive and no fluctuating temperature at all. (: Thanks to everyone that contributed. Greatly appreciated
