Adjusting clutch master cylinder/ clutch pedal

Hey guys, before I installed my new clutch/flywheel My car would lurch forward a hair when I 2-stepped it at 7,500rpm with the Clutch ALL THE WAY DOWN (disengaged).
The threads from the rod that comes from the clutch master cylinder were on the tips of the big U clip that connects to the pedal.
Now, with my new clutch kit installed and broken in, it's doing the same thing. I have a fairly new OEM clutch master cylinder, and an o'reillys slave cylinder. Nothing leaks, it's been bled numerous times and done properly.
What should I look into doing next? This problem has been a problem for quite sometime and i've destroyed a few transmissions because the clutch won't disengage completely with the pedal pushed all the way in.

60 views and nobody has had this issue?.. What if you were changing out your clutch master cylinder? Do you just throw it in? or do you take the time to properly adjust it? Give me some pointers!

^^ i have, it's all the way in pretty much. if i'm still not disengaging the clutch all the way what else should i do?
Try turning it more into the U-clamp there. The threading in mine is almost level to the top there, and the clutch engages about 2inches before my foot is completely off the pedal, meaning it's "high".

My clutch grabs real high! Any tighter and its like instant push of the pedal and its there, any less and the gearbox feels notchy. I assume thats normal lol. Are you sure theres no air in the lines? If you adjust it all the way where it is just threaded it should definately not lurch forward or anything while in gear. The best way to check for over extension is just to start the car and make sure there is a clear area then push the pedal in at different heights and see where it goes in smoothest.
