The answer to the OP's question is 'Yes'
Lets say i have a 50 lb/hr injector at 45 psi and WOT / max. load values in the fuel table are 80% duty.
50 x .8 = 40 lb/hr
So, as long as I don't change the fuel pressure or size of the injector - what difference does it make if my pump is putting out 400 lb/hr or 4000 lb/hr? The pump has nothing to do with duty cycle/tune.

no, the pressure relief valve is what determines fuel pressure. you're just bypassing more.
doesn't matter if you have a weldon or a walbro, if you have an adjustable pressure relief valve, you can set fuel pressure to whatever you want.
now, if you put a monster weldon pump on it (like a 2345) with a stock pressure relief valve, the stock pr valve won't be able to bypass everything the pump puts out, and in that case you'd see a steady increase in fuel pressure the longer the car ran. But this will not be the case with a 255 + stock pr. you're fine.

people get tripped up on this quite often.
just keep pressure and volume separate.
You can have a system flow 1 lb/hr of fuel at 10,000 psi
or
You could flow 10,000 lb/hr at 1 psi
