What should the shift point be on this graph?
Just trying to figure out where the shift point should be, I'm thinking about turning it on around 8400rpm, to shift around 8600rpm...thoughts?

The best shift point would be just before the cutoff point. You can see on the graph that even at 8600 rpm, you still have more power then at around 6500 rpm (where you will be after the shift)

You want to get the most out of your hp, but when you shift you want
to land in a high torque area.

By analizing your graph, and given you're good at shifting, I'd say to shift around 8,200.
if you can call it that...looks pretty flat to me
