EP3 gas mileage
When I drove to California last year, I was going about 75-80mph the whole time and I was getting about 34mpg. I would fill up with a little over 10 gallons so about 340 miles is what I would go between fill ups. Another thing to think of when driving long distance (if that's what you're planning for maybe) is to keep the RPM's pretty steady and hold the speed. If you use your cruise control, you will get better mileage than not using it.

I can get about 325 miles,my car is bone stock, I am pretty sure my fuel gage is messed up cause it bounces around alot and sometimes the gas light comes on at like 260 miles and i go and fill up and it only puts about 8 gallons in it. I do mostly interstate drivng at 70mph not using cruise.

noisy valves... maybe you should go get a tune up cause doesn't. Mind you I just got a valve adjustment not too long ago but they told me that the adjustment was very mininal! I would take a look at that...
I know K-series motors have noisy injectors actually. The ticking you hear is more than likely the injectors but I would get a valve lash adjustment anyway, good thing to keep in check.
K-series transmissions are very finicky as you will notice. I take it you just got the car? You will notice that shifting your EP3 is a lot different than most other cars. You can't really just slam it into gear fast like other civics. You almost have to time it all.
It seems like you might just need to go through the whole battery of services. I would get a tranny fluid change, oil change, valve lash, maybe new sparks plugs (could also be making the noise you speak of, NGK'sftw), maybe even a fuel system clean.

Damn you guys are lucky to get 300+ a tank... i get like 270+ and my car is all stock.. only got 55k miles. Changed the spark plugs, tire pressure is to spec, only got an aem sri... everything else is STOCK!!... and i drive on the freeway like 90% of the time...

I usually get about 280-300 before the light turns on. I have 85k miles and i just changed my spark plugs so i am not sure what it is at now. I am at about half a tank with 200 miles on the tank.
You're sitting at like 4k rpm's on the highway so that isn't unexpected.
I anywhere from 320 to 360 depending on how I drive. I have bolts ons and such. Seems like after putting 17s on my car the gas mileage went down a little but who knows. Either way I am happy with my EP3 usually getting around 30MPG since it was factory rated at 26 and 28. Not bad to have a sporty fun car that still kills at the pump. All my friends are a little jealous of it.
The clicking you are hearing is probably the injectors. All honda motors are like that. Depending on how many miles you have you might need a valve adjustment though. They are self adjusting hydraulic valves but do need adjustment at 120K miles I believe. Also change the tranny fluid and it will probably help out the tranny shifting.
