temp reading all messed up! help!

temp reading all messed up! help!
Everytime I brake my temp gauge goes up but goes back to normal when I excelerate but when I turn off my engine the fan stays on for a while, does anyone know what could be the problem? Im thinking its a sensor but I have no idea which one please help
