Knife-edging crankshaft and micropolishing?
I have heard that there is no gain in performance if you knife edge a Honda crank since they don't go throw the oil like on some domestics. I still see people spend the money and get it done for some reason. It is less rotating mass, but why not just get a lightened flywheel?

Yes, it does become less structurally sound... but most people that do this are full race... I wouldn't have it done on a street car.
Micro polishing just gives the journals a smoother surface for the bearings to contact... less bearing wear.
Most machine shops do both of these procedures.

pistons are different... they dont come in a 4 pack so you could be purchasing pistons made a year or so apart... either way... balancing pistons and rods is a good idea
And don't forget the comfort of knowing the crank is balanced.
You can always have them check it and see if it needs it.
