I agree, but there is always somone out there looking or one of these in particular. The bike is too rusty and beat to fetch more than that. The tires are old, the chain needs replacing and I am sure the motor needs to be freshened up.

further along , paint should be done this weekend if the weather here stays nice , too much moisture in the air lately
pics suck but, i couldnt find my triopod and had to put it on low light settings , but heres the progress , kind of chuckled at the low price , i have at least that much in parts , once all is done i should sell around 2000, its a good solid running bike with a current tune up , runs super smooth

Chuckle all you want... a home brewed cafe isn't worth as much as a OEM restored or original bike. Sort of like the people with modified Hondas who say "I've got $XXXX in parts alone." No one cares, an unmolested bike is worth more,. End of story.
Tis true man, I just sold my KZ750 LTD Cafe bike for $1800. I had well over 800-1000 hours in building it and probably 2000 in parts not including the bike itself. You will not get a great return on it.
The only reason why I sold my bike is that I know that if I want to ride it or take it anywhere I can because I sold it to my bother. I know that he will take care of it and I know I will still be the only one to ever put a wrench on it. I also know and trust that he will take as good of care for it as I did.
I HIGHLY doubt that you will get what you want for it. Most of the time you will not get very much for a Cafe bike unless it has some sort of historical signifigance or it is rediculously rare.

Uneducated/Excited buyers never cease to amaze, he will likely get $2k from someone.
The bike looks good
