Default Soft Brake Pedal

I finally found the time to swap on my ex front brakes. The problem is that I have to push the pedal further just to feel the brakes clamp and a couple times i found myself locking them up. I know new pads and rotors have a breakin period so I called myself going easy on them and make sure I apply the brakes earlier...well this morning I was taking the off ramp on the highway and it was a sharp curve. Car slowed down fine from 65 to around 30 mph and then next thing I know is the wheels are locked and I'm sliding at about 25-30mph off the curve of the ramp. Luckily all wheels stayed planted and the grass stopped the car without me damaginig anything. It was drizzling but not that bad of weather. I started braking before getting on the ramp so I'm curious whether I just need to keep bleeding the system, wait for the new brakes to wear in or both to get rid of the soft pedal feel. Already checked for leaks and the reservoir stays filled. Using brembo blanks but not sure which pads. Any suggestions?
