Default overheating d15

i have plenty of coolant.
i know the thermostat is good.
the hoses feel right...
i used to be able to turn on the heat to keep it down but it doesn't help as much anymore....
when i rack it off or get on it, it goes way down even more then what it should
i hasnt been bad because of the cold weather

my fan kicks on, but could i have a problem with it staying on?

i have also recently replaced my head gasket and water pump and thermostat...
