Default excessive engine oil

What is the problem with too much engine oil? I've heard bubbles can form in it....

The reason I ask is because when I installed my new motor, I got the oil level just right. I checked it again yesterday (500 miles later.... small break-in period before I go full synthetic), and it was 1 quart high.

Drain and refill. Shouldn't be too much of an issue.........yet.
