Couldn't of said it better. Just like Pocket said paint the whole item, then block sand the letters.

Thats what I do and it actually will look better since you are sanding it and it will shine like its brand new.

You can sand it before you paint with like 2000 grit to make sure its clean and looks good. Then after the base is on you can either take a little reducer on a rag a with a little effort take it right off.Or you can sand it off with 1000-2000 grit. Then clear

You can also put vaseline on the letters and then paint and wipe off the vaseline after paint dries... paint wont stick to the vaseline but make sure your vc is dry and not wet or it will be a mess

i've done the tape, and done the sanding, sanding is by far better. Just use a flat object and it comes off much cleaner and perfect all around. What i did was a 600 grit going at 45 degree's one way, then 45 degrees the other way for my final sanding so it looks cross hatched

i knew a guy who used wax on the letters then painted the valve cover, then melted them off. Dunno how how applied the wax though.
