What matters for rubbing (the whole reason for rolling fenders) is the size (including width) of the tires, not the wheels.
As for wheel width, again, you're better off deciding on the size tires you want to use, and then seeing which widths are approved and finding something that won't make them too stretched or bulging. Generally, with an ITR, the best sizes are:
195/55-15 or 205/50-15 on 15x6 or 15x6.5 (or, for the 205 Azenis, 15x7)
205/45-16 or 215/45-16 on 16x7 or 16x7.5
205/40-17 on 17x7 or 17x7.5
The above is for street use. For the track or autocross, you might want something wider - or you might not; I'm happy with 205/50 R comps on 15x6 stock wheels - but it's not going to matter on the street.

The proper sizes for an ITR are 205/45-16 or 215/45-16. Unless your car is really slammed, either should fit without rubbing. 215/40 is too small.
For either size, you're better off with 16x7 than 16x8. On 16x8, the tires will look stretched, and they won't protect the lip of your rims against curbing.
