Default b16 turbo/engine questions.. bore?

ok so i decided to sleeve my block out since i was replacing the pistons.. what should i bore it out too? wat is the difference in bore size? i went to the shop and this is wat he told me i need to do:
*sleeve out the block and bore it out to watever i want
*polish crank
*surface block
*balance; flywheel crank rod bearings rings pistons rods and pully.

anything im missing for building my block? wat shuld bore size be? also wuld it be fine if i only built the bottom block right now and waited to change my springs and retainers till later?

only post if ur gonna help me out please. people tend to wander off on there own stories.

bore to 81.5mm or 82mm. leaves plenty of room for future overbores if ever needed.
