my car is over heating after i drive around for a bit.
i put a new headgasket on just last week. a new thermostat on before i put the motor in. the fan is on a switch.
i drained the coolant out of the system and put some more in, and i bled the system with the cap off tell it warmed up.

Has your actual coolant level gone down at all? I know it may not be VISIBLY leaking but maybe you did not clean the head to block surface well enough and it's causing problems again. Just a suggestion.

you said you had the fan on a switch, with the fan turned on, is it pulling air into your motor from the out side into the engine bay, or is it blowing from engine bay out to the atmosphere?? check that... you want it pulling from out side into engine bay..

the raditator is fine. it was in the car before i did the swap and the motor never overheated.

the fan is in its stock place on the rad

I was struggling with this very problem 2 weeks ago.
When car is cool
1. Jack up the car from the front.
2. Fill the upper rad hose with coolant(to fill the block)then attach to radiator.
3. Fill radiator with coolant til full. Leave the cap off.
4. Turn on the car and let it warm up. Watch for bubbles.
5. After about 10 mins the fans should kick on and the bubbles should be few.
6. If the fans ARE kicking on then check the upper and lower rad hoses by touching them where they meet the radiator. If the upper one is hot and the lower one is cold then your thermostat is stuck shut. Replace it.
My car would stay cool at idle but once I started driving the temp would shoot up.
I would say change the thermostat. It's a quick and easy fix.

Listen to him and try this, if you haven't yet.
I had the EXACT same symptoms you are describing. Temp gauge went up ONLY while driving, and otherwise was fine. I bled the system using the little nipple, like you bleed your brakes. 2 minutes, Problem solved

yeah, bleed the system first before you try anything. Did you put your thermostat the right way with the little nibble on the thermostat on the upside?
my car was doing this to me last week i changed everything thermostat coolant radiator i bled the cooling system flushed the coolant checked the fan but still did the same **** finally i did the the water pump and it stoped ii guess the water pump was leaking and i could not see it you could try this if you have the time and money just figured i could help.
