I might have covered this in the sticky or it might be planned for my new site. Anyway, there are advantages/disadvantes to each.
Normally closed: this is how shops set it up so that if the alarm fails, it wont strand their customer. This is great for customer service, but not so good for security. If your alarm is disconnected by a thief, then there is no need to bypass the starter circuit because it's NORMALLY CLOSED.
Normally open: this method is more secure because even if power or ground is removed from your alarm, or the control wire to the relay is cut, it's still actively preventing the car from starting. However, in a couple years when your alarm stops working because of the crappy "standard" install, you will have to bypass the starter kill circuit or your car wont run.

Or the natural failure of a relay.
That said I prefer Normally open it offers far more security.

I've never had a relay go bad on me. But it's a good idea to use Bosch relays for critical things that affect whether your car can run.
The car is fully of OEM relays anyway.
