Looking at making a DP and with a worst case scenario, how many mandrel bends would be required?
I'm thinking a couple of 3" U bends with 6" legs and a few feet of straight?
For the dumptube, I was going to route it back into the DP , but is a slip joint mandatory?

I'd re-enter the dumptube back into the downpipe at an angle of 45 degrees or less in the straight section or at least 12-16" down from the turbo outlet. Also to keep from cracking, put a small flex section in the dumptube, something like 1.5" ID stuff or whatever diameter your wastegate uses.

Honestly, I've done a bunch of downpipes with just a could U bends. The straight wasn't needed. Add in a flex pipe as soon as you get past the oil pan and you're good to go.
I agree with Andy R on the dump tube. Use a flex, keep an angle of 45 or less (do as little angle as possible) and you'll be happy.

One other thing, is there any significant difference between using 304 and 420 stainless? I don't live up north and am wondering if it's worth the extra money for the 304.
