you'd get negliable performance gains by deleting the cat. A properly sized cat (a bigger cat will ahve more surface area; more surface area is more flow) will not hinder performance all that much, plus the OP is in Cali, he'd be helping out the air as well.
For a 2.5" system, I'd reccomend the following that'll look pretty stock and flow well:
Carsound/Magnaflow Cat: 2.5" 16" length # 93506 ($75-$100)
Magnaflow resonator: 22" length 4" round 2.5" in/out #10436 ($54-$65)
For louder muffler (straight through): Magnaflow ctr-in/ctr-out 2.5" 5x8 oval, 14" length #12216 ($55-$70), 18" length #12246 ($64-$75)
For a quieter muffler: Dynomax Super Turbo 4x9 2.5" offctr-in/offctr-out, 14" length sport #17734 ($40 at http://www.summitracing.com), 20" length street (its a mellower sound) #17749 ($48 at summit)

I'm running custom 2.25" piping matted to a 14" resonator to a magnaflow muffler. This is in a 92 hatch with a 95 gsr motor. Tone is nice and depp. Not raspy at all. I had the muffler painted flat balck as well with no tip. Looks stock.
