Temp guage problem
does it drop to the bottom or just a little, when the engine revs the flow of coolant is faster in return cooler may be normal if it drops all the way change the single wire coolant temp sensor located next to the thermostat housing with a OEM sensor aftermarket sensors are not reliable and cost is not much different

That's a rapid drop. No way will coolant chill that much that quickly. I would look for a poor wiring connection or connector.
