Could be a couple things. But check these more common issues...

Radiator cap
Hoses
Thermostat
and antifreeze/water misture.

are you talking about the stock temp gauge or aftermarket water temp gauge?

is your water pump circulating the coolant properly?

check hoses for obvious leaks, check water pump tell-tale hole for dribbles

remove thermostat, stick it in a bowl of warm water with a thermometer in and keep adding hot water and note the temp at which the stat opens up (although i dont know what temp the EM2 stat is designed to open, somebody else will have to tell you that)

check for leaks going into the bulkhead for your heater box (which is warmed with engine coolant)

check if your coolant temp sensor is ok, check if your dash temp gauge is ok

Although, that is a great way to test your thermostat, I always feel that if you've got it out already that it's a great time to put a new one in. They're not very expensive to replace.

Quite true, Matt. Ignore my test procedure... if you get the stat out, just replace it.

Hey, it's still a great way to test the thermostat, to see if it truly was the problem.

If the problem persisit you may have a blown head gasket, very common problem with the 01 stock gasket was not made of metal.
Check if you water resorvoir gets too full after driving awhile.
