What does the knock sensor do?
Well, like CR-X said, it senses detonation (which can be due to a number of things: poorly adjusted timing, bad gas, extreme loads, faulty parts, etc...), and then it retards the timing and fuel accordingly, so you don't risk damaging the engine.
It will be okay to get rid of the knock sensor if you getting your ECU chipped. Just be sure to keep and ear out for pinging/knock. You can 'hear' when you have knock. Its like metal hitting metal in your engine.
