Answer for unspecified car 'whith' out the thermostat
1) Coolant circulating too fast
2) System Low on Coolant
3) System Air-bound
4) Cooling fans inoperative

Pick One !!

Consider yourself lucky, most won't answer without knowledge of what year/model you're talking about.

The water will flow thru the engine and radiator to fast, one, it will not stay in the radiator long enough to get cooled off and two, will not be in the engine long enough to cool it off. It could also cause air pockets to form which will not do anything.

there is a blockage in the sytem somewhere . My tstat was stuck wide open and the car ever once overheated. Driving a car without a tstat will cause it to run extremely rich since the ECU things that the car has not warmed up yet.
