Default Temp. guage problem Help!!!

My car's temp guage was showing me a low reading after testing it I taught it was a bad temp guage but I changed it and its still not working properly.
When the car is running at 185* it shows 1 mm over cold. and when I ground the wire from the sending unit it only goes up to half. I am thinking its a wiring problem but I was hopeing you guys could save me some time by telling me where to look. Someone must have had this problem before. I have a VFAC installed and I don't know if this could be causing the problem. Help!!!
