So say I've put in 81.5mm pistons. Can I use a stock headgasket?

Your not an idiot. Honda made the headgaskets .5 over from stock so you could use over sized pistons. You were told false information

Well, I've got a stock head gasket sitting on my 81.5mm block right now, and there is gasket in the chamfered area of the cylinders.

If your head chambers are 81mm then why wouldn't you be able to use a stock head gasket?

Because part of the gasket will be exposed to the combustion chamber. I don't know about you, but the thought of having a thin piece of stainless in there gives me shivers. Hot spots=detonation city.

It should fit. Are you sure it is 81.5mm? If you look on Honda or Acura, they sell oversize pistons but one size headgasket....

i've used an straight-from-honda headgasket, slapped it on an 81.5mm bore motor w/ room to spare, and the motor runs fine

the bore on oem HG's is a little bigger than 81.000000000000 mm

I dont think you understood the point I was trying to make. If you have an 81.5mm bore and a 81mm head. Thats a sharp edge in the combustion chamber too.
