You don't have to, but I think it would be easier to just pull everything as one piece. At a minimum I remove the crank pulley to get a few cm more clearance. Good luck.
If you are scared of pulling the driveshafts then you will be terrified once you get elbows deep in trying to pull that engine.
The axles are an easy thing to remove and pulling the engine and tranny as a unit makes the whole ordeal much much easier

It's a lot easier to bolt and unbolt the tranny when it's removed w/ the engine. Messing with the CV axles may seem cumbersome, as it will be the first time, but is something you may as well learn to do effectively now especially if you plan on doing future swaps.
You will kill yourself if you try removing just the engine while leaving the tranny in place.
Yank it out as a whole and place it back in as a whole. Get an adjustable linkage for the hoist so you can lower one side of the engine while raising the other.

Where would you get something like that? I'm going to be using a hoist soon, and that seems like it would be useful.
