Getting into a '00 s2k
Have the ECU checked for an overrev. Also listen for clutch noise and rearend noise. Also check over the top real well and inspect the plastic window. The price sounds right for my area where 02 cars still fetch over 27k. I know there is more but that is the jist of the big problems that I know of. You may want a shop to open the diff for an inspection. If you know the car wasn't driven hard and know the owner you can skip some of the above.

Check top for wear holes.
Check rear plastic window for any cracks. If it is cloudy it probably just needs some plastic polich applied to make it look like new.
Check roof operation up and down is OK.
Go for a drive, make sure there is no wind whistle due to the top not closing properly.
Listen for latch rattle on the roof latches (may need to be adjusted - no big job).
The ECU does not permanently hold information on overrev, so probably isn't worth getting checked. However any odd noises from the engine I would be wary of.
Make sure no CEL lights.
Check clutch operation. Make sure you can shift into every gear. 2nd can clunk a little when cold, so shift slower into second if this is the case. If you cannot shift into other gears (eg 5th or 6th) whilst driving normally without grinding then this may indicate gearbox problems such as the synchros.
Check condition of rear tires. You don't want bald tyres and spin out on the way home.
Make sure it has been regularly serviced.
Get the owner to show you the "secret compartment" (ie opens above the centre console). Although even they may not know it is there.
Get the owner to show you where the button is to release the fuel door (you'll thank me for this later).
Do the usual check as per any other car (eg evenly worn tires, oil condition etc).

The centre compartment (glovebox) between the seats has a front door that folds down. Inside this compartment at the top is the latch where this door clips into.
If you feel around that top area, you should be able to find another little hidden catch. This allows the top section of the centre console (where the windblocker sits on top) to fold up and backwards.
Under this there are two sections. One about as deep as the owners manual, and the other not as deep.
Those owners that do not know where the fuel door release button is will look quite silly when they go to fill up.
