Look on amazon.com for some books on the subject or most universities with a plastics engineering or some sort of mechanical engineering usually teach applications and processing of carbon fiber. The latter is far more in depth all the way down to the chemistry of the resin. Check out the Vehicle Research Institute @ http://www.etec.wwu.edu/ we have built a signifigant number of prototype carbon fiber cars.

A good reference book is Competition Car Composites: A Practical Guide. It's a little dry but it goes over a lot of the materials and basics, then slowly builds into more complicated projects.
