It changes the volumetric efficiency of the engine. Basically it flows more air stock for stock (B16A, B18C5 vs B18C1). Also the valvetrain is different. If you change the valvetrain and have some head work done it's a bad *** head, but it usually costs alot of money. So most peeps usually swap out the head for used B16s or B18C5s. I know you can get a complete B18C5 head for under $3000 from the dealer. For turbo apps the stock B18C1 head seems to work really well due to the shorter lift and duration of the cams, but a mild port n polish will yield more gains.
i personal rather have that B16A head and B18C block setup rather then LS/vtec because the B16A better flowing head and B18C bloack will give it that little extra torque that the B16 block lacks in.

technically the B16 head flows more air...
but the drop in compression by switching to a B16 head
I think people do it because most of the time, B16 heads are cheaper than GSR heads... and are of course alot cheaper than ITR heads.
