All Motor / Naturally Aspirated No power adders

Default PR3-3 Headwork Q's, dillemas.

So winter is coming up and the whip is going into the garage for some winter sleep.

I'm taking it apart, I have a built shortblock ready.

The next step is headwork. I'm pretty much set on Tom @ Portflow but before I speak to him I have few questions that some of you might know the answer to.

Is there a way I can send just the bare head and Tom will do the headwork and include valvetrain of my choice (which will be OMNI) or should I get the valvetrain and send everything together?

Considering this setup:
LS block with balanced crank, rods, .25 over P30 pistons, ACL bearings, should I mill the head at all? Block has been decked .010...

Another thing I cant decide on:
Omni valvesprings, retainers, high compression valves + No head mill ?
vs.
Omni valvesprings, retainers, ITR valves and head mill ?

I'm looking for high 11.x:1 low 12.x:1 C.R, tuned with Hondata on 93 Octane gas.

Suggestions appreciated! TIA!

We sent all the parts together along with the head...valve seals, springs, spring seats, valve keepers, and valves.

He provided the head work, his own retainers, and installation.
