i dont think theres really a kit. you can just take off your belt. or find the rack from a non-ps car and swap it in, then remove all your ps equipment

no kit. just remove the pump and lines, then loop the inlet/outlet on the rack to keep it "wet"

i also have the padawan kit. i used it to convert my power steering to manual back in early 2004 and here's what i think, since i have access to three different cars, each with a different steering system.

91 Integra (OEM Power Steering)
95 Civic VX (OEM Manual Steering)
93 Civic EX (OEM Power Steering converted to Manual)

compared to the 91 integra w/ powersteering, my 93 civic EX is VERY stiff when the car is not moving. and the tires on my EX aren't even that wide, they're 195/50-15 Bridgestone S-03's. you definately need two hands to turn the wheel if you dont want to take a long *** time trying to parellel park. although the steering is very stiff when the car is stopped, it feels great when you are actually moving tho. going from having power steering to no power steering, the steering felt a lot more precise. if you jerk the wheel even a little, the car would move almost at the exact same time. whereas in a car with power steering, there is a slight lag in the response. under normal driving, converting your power steering to no power steering, it is very tolerable and in my opinion, is a hell of a lot better than power steering.

you would think that converting your OEM power steering to manual would make it feel pretty much like an OEM manual rack, but it's not. compared to my 95 Civic VX with no power steering, my 93 Civic EX is still slightly stiffer while stopped. under normal driving, the 95 Civic VX would pretty much feel like a car with power steering, whereas the 93 Civic EX doesnt. also, it takes more revolutions of the steering wheel in a manual steering car to turn it from lock-to-lock than in a car with power steering.

so basically, converting your OEM power steering to a manual will give you a very stiff steering wheel when the car is stopped, but a very responsive car when it's moving.

all in all, if you don't want parking to be a bitch, keep the power steering. i've had so many friends 'test' the steering of my car and they all complain it's very stiff, but i've gotten used to it.

cliff notes:
93 Civic EX with converted power steering to manual = stiff but responsive and precise
95 Civic VX with OEM manual steering = not as stiff and not as responsive
91 Integra with OEM power steering = loose and not as responsive

The kit Padawan produces gets a from me. It comes with everything needed to convert a ps rack to a manual one. One of the fitting that you have to install on the rack itself is a bitch, but overall it is a simple and straightforward install.
