Correct me if I'm wrong, but the way I understand it, is that VTEC has one crossover point, whereas iVTEC has the ability to change the crossover point depending on variables like vehicle speed, throttle position and stuff like that...

Kinda.
i-vtec is the same as vtec except, it has the ability to advance and retard the cam gears on the fly.
