what size of mandrel tubing do I use?
I have a 95 ex coupe and I have no header yet (coming soon) and I am getting some mandrel bent stainless exaust made. I need to know what size to use to get good performance and sound quality?

For a NA engine? I'd get no smaller than 2.25" diameter and no bigger than 2.5".
You'll lose more low end grunt with the 2.5" but you'll get a little more top end frenzy. It will also be fairly loud depending on what kind of muffler you go with. I say just go for the 2.5" if you don't really care about a little bit of noise, and plan to add some more mods down the road.
