can we see pics of the car, 3000 is really steep for a totaled car that should be like 2 grand max. There are plenty of write-ups in the faq section OR IN THE STICKY AT THE TOP OF THIS FORUM. But if you can find someone one this board who is going to give you step by step directions out of the kindness of their heart more power to you. There are quite a few steps and parts that go into swapping an engine. If you really plan on doing this you need to do some research on your own.

3k$ sounds ridiculous. Some insurance companies will 'total' a car, but a salvage yards may still consider it 'repairable' and not completely scrap it. Just depends. Need pics.

Engine swamps are not good. They tend to hydrolock if they are too swampy....

As for engine swaps, 3k does sound steep for the car unless it's an ITR or something. Si's tend to bring 1800-2200 or so if they are fairly totaled. Rebuildable ones obviously bring a good amount more.
