Default thermostat?

do you think its a good idea to run without a thermostat ?(turbo)

Why would you want to ? Take longer for the engine to warm up which is not always good.

Agreed with above posters...no t-stat will cause the engine to run cooler for longer which can in turn cause oil flow not to be as pristine as it would with an engine running at operating temperature. This in turn leads to possible oil starvation for the turbo and well you can go from there. Just leave it in there.
