I'm going replace all my sensors on this new build of mine and was wondering if there is a performance knock sensor avalible?
Never understand why they range from 10.00-150.00

Get a bosch sensor and wire that up to your aem. Youll need to "tune" it for your motor. Easiest way to do that is to induce knock at low loads then get the freq you hear the knock and dial it in from there.
Since youll have a motor with a large ptw gap youll have some piston slap. There isnt going to be a one size fits all setting for a built motor and a knock sensor.
You have individual coils so you can pull timing or fuel out of 1 cylinder at a low load to where you get just a slight sound of knock.
At that point you datalog the knock sensor and set a thresh hold for knock.
Anything above that thresh hold will be considered knock. The aem will pull timing and add fuel depending on how severe the knock is
Are you using a gsr block? That would be easy to add the sensor in.

Talked to Beau @ AEM he recommended me to use the Donuts style Bosch knock sensor. So that what im going to do. The OEM sensor it noisy.
The OEM sensor is not noisy. Here's proof. Look at the bottom orange graph pull from 2000-6200 rpm. Highest reading is about 1.8 volts...
Yes it's fully adjustable so when you throw in loose ptw pistons and aggressive cams/springs the now different engine noise signature can be filtered out somewhat pretty good even with the stock sensor.
Here's a good one:
