I know about looking for features I want in a head unit (EQ adjustability, MP3 ready, RMS wattage, etc), but what else should I be looking for if I want a good sound quality head unit?
Also, anyone have any suggestions for a good SQ head unit from $100-$200? TIA

Can I get some words to why you are doing this?

the words SQ headunit do not belong in a sentence with the price range $100-200.
this is why he gave you a crook and a thumbs down.
a sound quality headunit is much more expensive, like the pioneer premier P9 which cost $1299
if you want sound quality get an amp. head unit power isnt clean.
also if you are going to build a stereo system, be realistic, dont set you prices so low. a bottom of the line head unit cost around 100-150 dollars.

Gotcha. Sounds like an easy answer. I think I'll just get a 4 channel amp and a crossover and use my 7 band EQ to get the sound that I want.
Spend the money on a good HU...all sound starts there. If its giving a shitty signal to the amp the amp is just going to send that shitty signal to the sub. Look to at least spend $300 on a good pionner or alpine

f*cking right! you don't need eqs and all that **** if you have a sweet deck that you can fine down the original signal.

A decent deck will have an eq already in it...if its pioneer premier it may have a 13 band eq but for the most part an eq on a "higher end" HU will be sufficiant!
Go to ebay and search "pioneer premier cd" and you will find numerous deals and get some ideas of what you want!

When looking at a deck, i prefer to have something with a decent output voltage, and a clean signal to noise - I don't usually enjoy playing with all the bells and whistles like mp3s and onboard eq and if your short on cash, upgrade to a 4 chan amplifier first - change your deck later.
Head unit power now a days has reached a sort of peak where the limitation lies in the types of mosfet they are using - I doubt you'll see anything above 23-24 rms to your speakers and that's usually in the "high end" decks.
The best thing you can do - is spend money on an amp, get some proper power going to those speakers and see how you enjoy it. If you feel the need to buy a better deck later on - get something you enjoy rather than the new hotness..
The EQ you have, if external, may also act as a line driving, increasing your signal voltage (dirty or clean mind you) to your new amp. If your going ampless forever, the alpine 7995 can be had for around 2 bills i belive and its a nice deck.
just my 0.2 CDN
Shane.

A good HU is where it starts but every system no matter what can benefit from having an EQ even if the install is amazing.
