depends what sounds better to you. I like the lows of a 12 better than a 10. 12's are louder and can usually take more power depending on the sub.

10s are lighter, need a smaller box and have better sq again depending on the model.

If you need to ask, get a 10

What do you listen to, and how loud do you like your bass?

it's all in your opinion, but if you want a sub, chances are you want some bass, and if you're only getting one, get a 12

Very true. One 12 will satisfy most bassheads.

Also, how much trunk space are you willing to sacrifice. Do you want a sealed or ported box?

because with a ported box, u have that big air leak. kind of like a sealed box that isn't sealed properly. ya know what i mean?

So the air escaping the enclosure makes the sub quieter. I like putting small animals in other people's ports. The animals seem to like it.

it all depends on what brand and the money you spend. If you get a good brand 10 you should be just as happy as a good brand 12. 10's will give you better highs whereas 12s have much better lows but also dont sound as clean. These are just general rules tho, the best thing to do is just hit up a local circuit city if you have one or any other place that has subs on display and just listen to them.

... at the tuned frequency, and the roll off below that freq is pretty steep.

Yeah, if you tune it right though, a sealed will not exceed the low freq output of a ported until you get down to the teens. There is not much down there.
