Depends on where you kill fuel. If it's under the seat, a 15 amp fuse would be best, and as short as possible. You could also put a relay in that area, and control it with a low-amperage switch, but that's a bit more complicated (but not hard by any means).
You could also kill off the main relay, which shuts down various engine sensors, the fuel pump, the injectors, basically guaranteeing the car will not run. This can be done by killing the ground wire, you'll need a 1 amp (less will be very fine) switch for this.
Clutch kill will require very low amperage as well. Any switch you buy at Walmart or an auto parts/boating store will be fine. Whether you use a momentary switch ('horn' style) is up to you. That way you just hold the button, start the car, and continue on as usual. Should be easy to hide.
By your name you have a 1993 Integra - I believe the main relay is in the driver kick area, but unsure.

Ditto all the above.^^^
Although I will add a momentary switch, N/O, [normally open] will work on the CIS, [clutch interlock switch] a SPST, [on/off] switch is needed for the fuel or PGM-FI Main Relay "kill switch".
If your car is a G2 the PGM-FI Main Relay is to the left of the steering column, more on that if you need it.

I installed a kill switch in my 93 Civic which I thought worked really well. My car didn't come with cruise control, so I replaced the blank in my dash with a cruise on/off switch that I bought from Honda. I then wired it into my fuel pump relay. Whenever I parked, I turned off cruise and that was it.
No thief would ever think to push that button. Even if he was smart enough to realize it didn't come with cruise. And it was clean. No hidden switches, wiring was all behind the dash. Easy.
