Default which radiator? so many options

ok so right now i have stock which seems to work fine but the temp gauge on cluster is lazy and honestly i dont' trust it. would you all recommennd a double/triple core with slim fan ( i had a derale) which put out 2000cfm which was plently or just run a full size integra radiator with one fan and call it a day? tonight i ordered a wideband and a digital temp guage with i will tie inline to see where my readings are at as i said don't trust the factory gauge. What you would opinions entail if getting rid of the compressor and all that extra weight at i'm not using now anyway benefit me....i was to be able to run at constant 180-190 which driving/beating on it and don't want to take chances which the stock unit not being able to keep up. thanks. Please any input would greatly help my decision. thanks
