Default Temp Gauge Problem

My temp gauge is always on C when I drive. If I come to a complete stop, it goes back to normal after a few mins, but once I get on the highway back to C. I replaced my radiator, Temp Gauge Sensor on the side of the head and Fan Switch. The car doesn't overheat. Is there anything else, I should check? My recently removed my heater core, cause it was leaking.
