For 16's, you'll most likely want to run 205/45/16. That's the closest overall diameter to stock, meaning: it'll mess up your speedometer less than other tire sizes. However, since the K-1's are only available in a 7.5" width for a 16" wheel, you could easily run some 215's (or even 225's). The only problem you'd face is clearance between the tires and various suspension components, since the tires would be so much wider.
Personally, I think you made a great choice. I love the K-1's. I'd get them in silver, as the anthracite / titanium silver / whatever-you-want-to-call-it seems to have a green-ish tinge to it, making it less attractive on a black car (just my opinion, though). I'd also get the optional center caps, just to finish them out.
Tirerack has the sole distributorship for them in the U.S. They also have pretty fair prices for them. They'll be able to recommend the right offset. I can't recall the offset that most people use on the 16 x 7.5 right now. It also seems that most people who have them run the 205/45/16 and love the wheel/tire combo.
Good luck with the decisions.
Power to the black-on-black GSR's!!
