Default Critical Engine Temp?

So my car reached 217 degrees today at a stop with the a/c on.

Granted it hit 115 degrees today, should I be concerned?

Once the car get moving and rpms rise, car cools down to about 197 degrees. I've been told above 210 degrees is bad news.

Thats not good. You could put in more water instead of antifreeze to help keep it cooler.

Yes, new al. rad., oem water pump and thermostat were installed about 8 months ago. New coolant, 30/70 coolant/DI water mixture. I drove it today, outside temp. wasn't as hot as the other day, today was only 102, the other day was like 115. Today, car hit 212 at a stop and 194 cruising. Should I be concerned about detonation or anything else that could be making the engine run too hot?

That's also a possibility. I'm trying to narrow down the possible culprits. I haven't blown a HG, I used a block tester kit from work, and so far I don't have exhaust gases in my coolant.
