Default B16A1 Overheating Problems

Guys I have this b16a1 integra .the water pump is O.K, I've flushed and cleaned my cooling system ,radiator and somehow my temperature needle bounces. The thermostat has been removed and if i drive for about 10 miles the needle rises.Sometimes if the car climbs a hill the guage shows 2/3 of the scale then suddenly drops back down to normal on descent of that hill or on flat roads and stays there for some good time .This bouncing gives me no confidence to take long drives .I occasionally get a (thermosensor) code on my computer PR3 whenever i run hard for like 1 minute(engage vtec 7k RpM or up).I'd clear that code by switching off and on the car.CAn someone please help.I need my car back working like it was.

did you remember to put the thermostat back in?? it could also be the sending unit for the temperature gauge. this is located directly beneath the dizzy.

is the sending unit the single conductor (1 wire) sensor thing or the two wire one?
I'll have it changed in the morning and will get back to you.thanks much dude.
