If I take the PS belt off, so it stops leaking until I fix it, will it damage anything now that no fluid will be moving thru the parts.

If there is no fluid and the belt is still on possibly may cause problems. But if the belts off, the car could care less about the pump. The PS pump might as well be in the trunk as far as the engine is concerned.

I bought my car with the PS pump still on and no fluid. The crank had a single pulley installed on it. Drove it for ever until I pulled my engine for unrelated reasons.
If you are worried just top off the fluids after you take the belt off. It should leak slower without the pressure being raised by the pump.
