The 42.5 mpg was mostly I-86 going the posted 65mph, I'd say that made up 2/3 of the tank. Some of the driving was on smaller highways at about 60mph. I finished off the tank just putting around town.

I'm a Honda guy but am the internet sales manager at a Toyota dealership. A common package 2 Prius is $24,500 MSRP (and we don't mark up over sticker). I love the new Fit and plan to get one for my wife, but I tell my customers the difference is really that the Prius is more comfortable, spacious (passenger wise) and quieter. The better comparison is Prius vs. Accord or Camry because Civics, Corollas, Fits, Yarises, xDs, etc are really a class below in ride and equipment. If you disregard all of these things the math will never make sense on a Prius.

Hmm, I just looked at some specs, the Prius does have a good amount of rear leg room, 38.6 inches. The interior is fancier, and the ride more isolated. I think you have a valid point. However I'd argue the newest Civics and Corollas are very comparable in terms of size/ride/equipment. A Civic LX sedan can be probably be had for $16.5k, and it gets 30mpg city and around 40mpg on the highway, so I'd say that the math does not make sense on the Prius.

I own both. The Prius is fully loaded for 27k and I get around 52mpg The 09 Sport AT is 19K fully loaded as well and I get around 36mpg. So a difference of 8K. I drive 25k a year in California where gas prices are around $3.00 per gallon. So ,my total gas expense if I were to drive the prius for one year is (25,000 / 52 x $3.00) = $1,442/ year. With the Fit (25,000 / 36 x $3.00) = $2,083 / year.
So the difference per year is $2,083 - $1,442 = $641/year in gas savings. Don't forget that you might pay higher insurance for the Fit though.
About the prius:

The Prius is capable of 100mpg+ and the Fit is capable of 70mpg+.
