Need advice on installing manual steering rack in EM1

Need advice on installing manual steering rack in EM1
like the topic says
I bought a 99 EM1 for a new project and noticed the power steering was removed witch i would of done any ways but, I also noticed the steering wheel was about 30 degrees off.
so when i pulled the engine to build. I noticed that nothing to remove the power steering was done properly i.e. not looped or vented literally the lines were just cut and reminisce of the fluid is all but gone.
So i figure i should pull the entire rack and just replace with a manual rack out of a hx.
Does any one have any opinions on what routes i could take?
Also kinda random but does any one know why people covert to eg subframes?
I agree it is pretty straight forward and not really needing any other information i guess i just would like some positive constructive criticism on where to obtain the new rack or any thoughts on rebuilding ( Ive read about the different ratios in manual vs power)
Also I am not worried about a little muscling of the wheel im 6'4 250 and had a 7k pound 72 charger with manual steering so ive made that decision already

7k pound charger? Do you do demolition derbys or something. That's around a 4k pound car at the most.
As for your question, I'd use a manual rack. It's designed to be used without power assist, so you're less likely to run into problems. Couldn't tell you about the eg subframe tho.
