Feasibly. It would be much more ideal to design it in in the first place, or just sell your harness used and upgrade to one with a connector later.

Would it be feasible to tuck my sub harness on both sides with the motor still in the car? In a weekend?

Yes. Never done it before. Im halfway through pulling the dash off to get the harness inside the bay. How do I go about dropping the steering column? Actually, how do I do it without setting the airbag off is really what I'm asking. Just unhook the battery and wait half hour-ish?

Just unhook the battery and touch the cables together. That will deplete any potential in the system instantly. The steering column simply unbolts and drops down.
You really need to get your hands on a factory service manual if you plan on going this deep into your car, especially if it's your daily and you need to plan on driving it to work on Monday morning. PDFs are out there if you search.

I DO plan on driving it to work this Monday. I figured if I start Friday (tomorrow) right after work, I should have ample to complete it. If it gets tough, I might bring a Honda guru buddy over. I suppose I'll do my head light harness first, and just get warmed up with that. Ya know, to kind of get a small feel for what I'm in for. I've read over and over again it's not that hard, it's just a patience thing. And with all the write ups and wiring diagrams online, I'm sure I can pull it off. I mean, if you guys can do it, what can't I?
I also did just what you said with touching the cables together. I dropped the column last night and basically had the dash off and totally disconnected. Now I know exactly what I'm after when it comes to pulling the dash out of the car on Friday. It'll be quick now.

Yes it can be done. I do it to some of my old customers. But I charge more than I do when I make it built in in the first place.
I would post pics but admins delete them. Follow the links in my signature for pics n videos.
