Default temp gauge sensor wiring

When I bought my R the previous owner had installed defi gauges for oil temp, water temp, and oil pressure. Im not a fan of how they look in the car and since the car is stock I figure they are overkill. Anyway, the dash temp gauge I guess was bypassed when these were hooked up. I want to take them out but need to figure out how to get the stock one to work again. I looked at the temp sensor and the one wire coming out of it still goes out and into the harness. And it looks like there was a new water temp sensor mounted inline on the upper rad hose for the defi gauge. Anyone know the stock temp gauge is usually disabled? Can it be unplugged behind the cluster or would that make other stuff stop working too?
