Default reducing power steering?

is there a way to reduce the amount power steering helps you turn the wheel without removing it completely?

wider/stickier tires . . . .

Just an idea, but you could try replacing the hoses at the pump with ones of smaller diameter, or maybe some kind of restrictor. Although that may hurt power & pump life, since it will have to work harder.

Try a bigger pulley, you will also need a larger belt depending on the size of the pulley.
